Chhole or Garbanzo beans

Garbanzo beans are a very healthy and nutritious ingredient for a dish.

This recipe is a household invention, and makes for a great snack. This is a dry recipe but garbanzo beans are also cooked with gravy.

Chhole or Garbanzo beans


  • 2 tbsp. oil
  • 1 medium onion chopped
  • 1 cup Garbanzo beans
  • 2 tomatoes pureed
  • 1 tsp shredded ginger
  • 1 tsp shredded garlic
  • 1 tsp cumin seeds
  • 1 bay leaf
  • 1 dry red chilli
  • Salt to taste
  • 1/4 tsp turmeric
  • 1/2 tsp red chilli powder
  • 1 tsp garam masala
  • 1 tsp dry mango powder/amchur
  • 1 tsp chana masala
  • 2 tbsp. mint chutney
  • 1 tsp chat masala


  1. Soak Garbanzo beans in about 4-5 cups of water overnight
  2. Then, pressure cook beans for 2 whistles using the same water.
  3. In case you are in a rush, you can buy canned Garbanzo beans from the grocery store. These must be washed well before cooking.
  4. Heat Oil in a pan.
  5. Add cumin seeds, bay leaf and dry red chilli.
  6. After about 30 seconds, add onion.
  7. Saute until golden brown.
  8. Add ginger and garlic.
  9. Add tomato puree, salt, turmeric, red chilli powder, garam masala, dry mango powder (or amchur), chana masala.
  10. Mix well and cook until oil starts separating from masala.
  11. Add pressure cooked beans-this is a dry dish, so we need very little water.
  12. Whatever water is there should dry up by the time the dish has finished cooking.
  13. Mix well and cook for about 20 minutes.
  14. Add mint chutney, chat masala and mix well.
  15. Garnish with raw chopped onions.
  16. Your dish is ready to serve.
