Indian Chinese: Chicken in hot garlic sauce

Continuing with the series on Indian Chinese dishes, here is the recipe for chicken in hot garlic sauce. This will serve two.


250 grams or 1/2 lb. boneless chicken. If you prefer chicken with bone, 4 chicken drumsticks should be good.

1 tbsp. hot chili sauce

4 cloves garlic, shredded

1/2 inch ginger pieces, julienned (or cut into thin strips)

Salt to taste

1/2 tsp. Soya Sauce

2 cups Chicken stock

1 tsp. Corm flour

2-3 dry red chilies

1 tbsp. Sesame oil or olive oil

Pepper to taste


Take oil in a thick bottomed wok and set on medium high. Add the chicken and sauté with salt till tender. Remove from heat and keep aside.

Add some more oil (about a tsp.) to the wok. Break the dry red chilies into small pieces and fry in the oil.
Add the shredded garlic and sauté till pink. Add ginger and sauté for a few seconds. Add the hot chilly sauce,1 1/2 cup chicken stock, salt and pepper to taste. Bring to a boil.

Add the chicken to this sauce and cook for some time. Add soy sauce.

To the remaining stock add corn flour and make a smooth mixture. Add to the simmering sauce to thicken the gravy. If you prefer to keep the gravy thin, then leave out the corn flour. Serve hot.

This dish goes very well with fried rice.
