Easy soul food: Khichdi

Some people hate it and some love it, but Khichdi is the best dish when you are feeling heavy, or have an upset stomach. To me, khichdi brings back memories of my childhood when my mother would lovingly tend to me when I was unwell. Not only is it simple to make, it is a wholesome meal and very healthy. Also, it is a very quick process and very low on effort.

1 cup Rice

1 cup yellow moong dal

1 tsp salt

1/4 tsp turmeric

1/4 tsp asafoetida

1 tbsp. ghee or clarified butter

1 tsp cumin seeds

4 cups water

Wash and Soak rice and dal for about 30 minutes before cooking.

Heat ghee in pressure cooker. Add asafetida, cumin seeds. After 30 seconds, add rice, dal, turmeric, salt and cook for a few seconds. Add water and pressure cook for 2 whistles. Mix khichdi well before serving.

Khichdi is ready. Enjoy :)

I think you may need 4 cups of water if you want the khichdi to be well cooked but not liquidy. For regular khichdi for the sick you need to add 6 cups of water.
