Eggless Nan-khatai


Nan-khatai is very famous among Gujarati  In every bakery you will find different types of Nan-khatai. Nan khatai is also known as cookies.  You can eat nan-khatai with milk, coffee, tea or juice. It is famous snack among children. Here I will share recipe of eggless nan-khatai.





1 cup Maida (all-purpose flour)


¼ cup Sooji


½ cup Sugar


1 TSP. cardamom powder


1 stick unsalted butter or 1 oz. unsalted butter


Few slices of almond and pistachios


¼ TSP. baking powder




Take I stick of unsalted butter. For better purpose leave butter stick at room temperature. I would recommend not to heat butter for melt. At room temperature butter melts itself. It would become soft so you can easily whisk.  Mix 1 cup Maida and Sooji, baking powder and cardamom powder. Sieve the entire ingredient so air will pass into the mixture. Now whisk butter in large mixing bowl with hand blender. Now slowly add sugar to the butter. Whisk well with electric hand blender. Now add other mixture. Mix well together. Knead the dough. Preheat oven at 350 degree temperatures. Take flat oven sheet. Apply small amount of ghee on the cookie sheet. Make small balls of the dough. Apply slices of the almonds and pistachio on each Nan khatai as garnishing. Place sheet in oven. Bake Nan khatai at 350 degree temperature. Bake for 20 minutes. For best result bake until lower edge becomes brown. One important thing to remember, place Nan khatai as far as possible in the sheet. Because when you put dough ball in the oven they will spread.  Turn off the oven and then let it be in the oven for 5 minutes until nan-khatai cools completely.  Eggless nan-khatai is ready.
