Kadai Paneer or Chicken

An all time favorite Indian dish, Kadai Paneer or Kadai chicken is delicious and a quick recipe. Below Is my mom’s version of this.

The advantage with this preparation is that you can make the same masala and use either chicken or paneer(cottage cheese).

Kadai Chicken


Chicken or paneer 1/2 kg or approx. 1 pound

1 tbspn Oil

1 heaped tbspn garlic paste

1/2 tsp Deghi mirch or red chilly powder

1 tsp shredded ginger

1 tsp zeera or cumin seeds

1 Black cardamom or Badi elaichi

1 Green cardamom or Chhoti elaichi

1″ stick cinnamon

8-9 whole black peppercorns

1 large tomato chopped

1/3 tsp Sugar (optional)

1 tsp Coriander powder

1 tsp Cream (optional)

Salt to taste

1 medium onion thinly sliced

1/2 Green capsicum julienned

1″ julienned Ginger

Whole green chiili deseeded and julienned 2-3 (optional)

1 tsp Kasoori methi

1/2 tsp Garam masala

Fresh coriander leaves or cilantro finely chopped

1 tsp Tomato sauce

1 tsp Worcester sauce


Heat Oil. Add cumin seeds and khara masala (whole spices- black and green cinnamon, cardamom and black peppercorn) .Wait for it to splutter. Add garlic paste and sauté. Add deghi mirch dissolved in 2 tbsp. water (dissolving it in water helps add color to the dish). Add chopped tomato and sugar and cook. Add cut ginger and coriander powder. Keep stirring till a fine paste is made. Add coriander leaves and cook some more.Add cream and paneer or chicken and cook till tender.

In another pan sauté the onion, julienned ginger, capsicum, green chilies and garnish over the cooked paneer or chicken.

Optionally, add kasoori methi, garam masala and coriander leaves along with the tomato sauce and Worcester sauce in the end and mix well. Serve hot with roomali roti or nan.
