Vegetable rice or pulao-Easy recipe

Vegetable rice is easily the tastiest and the quickest dish to make. And its a wholesome meal. Here is my recipe.

Ingredients

1.5 cups rice (white rice works best, but you can use brown rice too-you will need to adjust cooking times accordingly)

1.5 cups mixed vegetables (use frozen-it cuts time and effort)

1 medium onion chopped

1 bay leaf

4 cloves

2 green cardamom

1 dry red chilli

1 tablespoon coriander powder

1/4 tsp turmeric

1 tsp red chilli powder

salt to taste

1 tsp cumin seeds

2 tbsp. oil

3 cups water

 

Method:

Heat oil in a pan. Once hot, add cumin seeds, bay leaf, cloves, cardamom and dry red chilli. After 30 seconds, add onions. Saute onions till golden brown. Add vegetables, coriander, turmeric, salt, red chilli powder. Mix well and cook until vegetables are almost done. Add rice, mix and sauté for a few seconds. Add water and cook for about 10 minutes.

The rice is ready. Serve hot with yogurt or pickle.
